Yesterday we went to Trinity Groves, in an area of downtownish Dallas by the Margaret Hunt bridge -- which is so cool it's already on its way to icon.
This place, LTO (Limited Time Only), is called a "permanent pop-up restaurant" because every 4 months a new up-and-coming" chef and designer take over the place -- so it's new food and new concept in the same place. If the chef gets really, really popular, he has a great chance of getting financing for a new place -- he'll already have a track record. We had a great lunch, very inventive, very delicious. I took pictures of course, but as we were sitting under an orange canopy outside, even all my work with Photoshop did not help. I need a class, badly.
We walked the length of the long building Kitchen LTO is in along with about 10 other restaurants before choosing it. If all the City Market restaurants were in one building, plus a couple others, back to back, you get the idea of where we were. And although this place is not convenient especially (I don't think it is anyway), it was packed. Such a draw. http://www.trinitygroves.com/about/ I wish Kansas City had such an incubator. od As close as we come are food trucks.
